2019年济南食品中化学污染物及有害因素监测分析
目的 了解济南市2019年市售食品中化学污染物总体状况, 及时发现食品安全隐患。方法 对济南市12个区县的食品进行监测, 并按照《国家食品污染和有害因素风险工作手册》和国家标准方法进行检验、评价和分析。结果 2019年共采集14类1505份样品, 监测项目67种, 超标率为4.8%(72/1505)。从不合格样品种类来看, 肉及肉制品不合格率最高为11.2%(19/170), 其次分别为食用菌(7.5%, 6/80)和蔬菜(6.4%, 21/330)。从不合格项目来看, 铅、镉不合格率高于汞、砷; 对硫磷、克百威等高毒农药在蔬菜中不合格率较高, 分别为1.8%(6/330)、1.2%(4/330); 禁用药物克伦特罗在生畜肉内脏中不合格率最高为6.5%(11/170); 漂白剂二氧化硫在干食用菌中不合格率为5.0%(4/80)略高于面制品中食品添加剂不合格率4.1%。结论 济南市2019年食品中化学污染物总体状况良好, 但仍然存在食品安全隐患,需要加强隐患食品种类和项目的监测和监管, 保障消费者的食品安全。
Objective To understand the general situation of chemical pollutants in the food sold in Jinan in 2019, and timely find hidden dangers in food safety. Methods Food in 12 districts and counties of Jinan city were monitored, inspected, evaluated and analyzed by National food pollution and risk factors risk work manual and national standard methods. Results In 2019, a total of 1505 samples were collected from 14 categories, including 67 monitoring items, and the exceeding rate was 4.8% (72/1505). In terms of unqualified samples, meat products had the highest unqualified rate 11.2% (19/170), followed by edible fungi (7.5%, 6/80) and vegetables (6.4%, 21/330). In terms of unqualified programs, the unqualified rate of lead and cadmium is better than mercury and arsenic; high toxic pesticides such as parathion and cloverleaf had higher unqualified rate in vegetables, which were 1.8% (6/330) and 1.2% (4/330). The highest unqualified rate of the banned drug clenbuterol in raw animal offal was 6.5% (11/170), and the unqualified rate of bleach sulfur dioxide in dry edible fungi was 5.0% (4/80), which was slightly higher than that of food additives in flour products (4.1%). Conclusion The general condition of Jinan in 2019 is good, but there are some food safety risks. It still needs to strengthen the hidden food category and project monitoring and supervision to protect the food safety of consumers.
