不同养殖密度瓦氏黄颡鱼肌肉营养成分分析与评价
目的 分析评价不同密度养殖瓦氏黄颡鱼(Pelteobagrus vachelli)肌肉的营养品质。方法 采用国家标准的方法, 对瓦氏黄颡鱼肌肉的营养成分进行分析。结果 高密度(40、60、80尾/m3)养殖瓦氏黄颡鱼肌肉的粗蛋白含量显著高于低密度组(20 尾/m3), 而粗脂肪含量、能值和E/P值却相反。60尾/m3养殖瓦氏黄颡鱼肌肉的呈味氨基酸、必需氨基酸、氨基酸总量、EAAI值及E/T、E/N值均高于其他组。60尾/m3瓦氏黄颡鱼肌肉的顺式亚油酸相对含量、α-亚麻酸相对含量、EPA+DHA相对含量、单不饱和脂肪酸、多不饱和脂肪酸及必需脂肪酸总量均高于其他组。结论 瓦氏黄颡鱼养殖密度在60尾/m3时肌肉的必需氨基酸构成比例均衡, 不饱和脂肪酸含量丰富, 营养价值最高。本研究为瓦氏黄颡鱼高密度集约化养殖提供了参考依据。
Objective To analyze and evaluate the nutrient component of Pelteobagrus vachelli by different stocking density. Methods According to national standards, the nutrition components of the muscles of Pelteobagrus vachelli were analyzed. Results The crude protein content of muscles in the high-density (40, 60, 80 fish/m3) cultured Pelteobagrus vachelli was significantly higher than that in the low-density group (20 fish/m3), while the crude fat content, energy value and E/P value were opposite. The content of flavor amino acid, essential amino acid, total amino acid, EAAI, E/T, E/N in muscle of 60/m3 breeding Pelteobagrus vachelli were higher than other groups. The relative amount of cis linoleic acid, α-linolenic acid, EPA and DHA, MUFA, PUFA, essential fatty acid in muscle of 60 fish/m3 breeding Pelteobagrus vachelli were all higher than those in other groups. Conclusion When the culture density is 60 fish/m3, the proportion of essential amino acids in muscles is balanced, and the content of unsaturated fatty acids is rich, with the highest nutritional value. This study provides a reference for the intensive high-density culture of Pelteobagrus vachelli.
