2018年中国畜禽肉安全问题调查分析
目的 分析2018年我国畜禽肉的食品安全形势。方法 汇总2018年畜禽肉国家食品安全监督抽检结果, 对不同种类畜禽肉及其不合格项目等信息进行分析。结果 2018年共完成畜禽肉监督抽检1511批次, 检出不合格样品33批次, 总体合格率为97.8%, 不合格原因主要是违规使用氯霉素、磺胺类、氧氟沙星、恩诺沙星等兽药, 此外有2批次牛肉样品检出“瘦肉精”克伦特罗。畜肉中, 猪肉、羊肉、牛肉的合格率分别为99.6%、98.9%和97.7%; 禽肉中, 鸡肉、鸭肉的合格率分别为95.4%和93.1%, 其中乌鸡的合格率仅为72.4%。结论 禽肉的合格率低于畜肉, 违规使用兽药是最主要的食品安全问题。
Objective To analyze the food safety situation of raw livestock meat and poultry currently in China in 2018. Methods The results of the national safety supervision and sampling inspection on raw livestock meat and poultry in 2018 were collected and the relevant study of different kinds of meat and poultry and unqualified items were conducted. Results In 2018, a total of 1511 batches of livestock and poultry meat were inspected, 33 of which were found to be unqualified, with an overall qualified rate of 97.8%. The main reason for non-compliance was the illegal use of chloramphenicol, sulfonamides, norfloxacin and enrofloxacin and other veterinary drugs. In addition, clenbuterol was detected in 2 batches of beef food. Among the livestock meat, the qualified rates of pork, mutton and beef were 99.6%, 98.9% and 97.7% respectively. Among poultry meat, the qualified rates of chicken and duck were 95.4% and 93.1% respectively, among which the qualified rate of black chicken was only 72.4%. Conclusion The qualified rate of poultry meat is lower than that of livestock meat, and the illegal use of veterinary drugs is the major food safety problem.
