广州市市售动物性淡水产品副溶血性弧菌污染状况分析
目的 了解广州市市售动物性淡水产品副溶血性弧菌(Vibrio parahaemolyticus, VP)污染状况。方法 2006~2019年, 根据国家、省、市食品安全风险监测工作方案, 共采集966份动物性淡水产品, 开展VP检测。结果 VP总体检出率为21.84%(211/966)。不同季节、不同采样地点、不同种类、不同加工售卖方式淡水产品VP检出率差异均有统计学意义。其中, 第3季度VP检出率最高, 为27.40%; 超市VP检出率最高, 为32.73%; 甲壳类中淡水蟹VP检出率最高, 为53.33%; 生鲜类VP检出率最高, 为27.23%。结论 广州市市售动物性淡水产品不同程度受到VP污染, 应加强整个产业链综合监管, 积极开展健康宣教及食品安全风险预警。
Objective To investigate the contamination level of Vibrio parahaemolyticus (VP) in the freshwater products in Guangzhou. Methods Nine hundred and sixty-six samples of the freshwater products were collected for VP detection from 2006 to 2019 according to the food safety risk monitoring of national, provincial and municipal project. Results Two hundred and eleven samples were detected positive of VP out of 966 samples, with an overall positive rate of 21.84%. The detection rate was significantly different in different seasons, sampling positions, species and processing methods and selling styles. The detection rate of VP (27.40%) was the highest in the third quarter of a year. The detection rate of VP (32.73%) was the highest in supermarkets of all sampling positions. The detection rate of VP (53.33%)was the highest in the freshwater crab of all species. The detection rate of VP (27.23%) was the highest in the fresh freshwater products of all kinds. Conclusion The freshwater products had been contaminated with VP in Guangzhou. The government should integrate management throughout the food chain to prevent contamination, and carry out health education and the early risk warning of food safety.
