Objective To investigate the effect of ultraviolet LED cold light degradation of aflatoxin B1 (AFB1) on the quality of peanut oil. Methods The effect on peanut oil fatty acid was preliminarily evaluated by measuring the changes of fatty acid, acid value and peroxide value before and after Ultraviolet LED cold light irradiation. Results Peanut oil treated by ultraviolet LED cold light technology displayed no significant difference in fatty acid composition and content, acid value and peroxide value (P>0.05), which had little effect on the quality of peanut oil. Conclusion Aflatoxin degradation machine (ultraviolet LED cold light technology) basically has no effect on the quality of peanut oil, and provides a certain reference for the actual production of peanut oil processing enterprises.
