分光光度法和电感耦合等离子体发射光谱法测定面制品中的铝
目的 比较分光光度法和电感耦合等离子体发射光谱法测定面制品中的铝含量。方法 以GB 5009.182-2017《食品安全国家标准 食品中铝的测定》 第一法-分光光度法和GB 5009.268-2016《食品安全国家标准 食品中多元素的测定》第二法-电感耦合等离子体发射光谱法(inductively coupled plasma optical emission spectrometer, ICP-OES)为参照, 用2种不同方法对市场上随机抽取的油炸面制品中的铝含量进行检测, 同时对2种方法的检出限、精密度和准确度进行比较, 通过加标回收率和质控样品来验证2种方法的准确性和可靠性。结果 分光光度法的平均加标回收率为95.3%, 质控样品偏离真值9.1%; ICP-OES法的平均加标回收率为100.2%, 质控样品偏离真值1.6%。结论 ICP-OES法的回收率高于分光光度法, 且检出限低, 灵敏度高, 操作过程简单, 能更准确快速的对铝含量进行测定。
Objective To compare the two methods for determination of aluminum in flour products by spectrophotometry and inductively coupled plasma optical emission spectrometry. Methods GB 5009.182-2017 National food safety standard-Determination of aluminum in food first method-spectrophotometry and GB 5009.268-2016 National food safety standard-Determination of muti-elements in food second method-inductively coupled plasma optical emission spectrometer (ICP-OES) were used as references, and aluminum content in fried flour products randomly selected from the market were detected by two different methods. Meanwhile the limit value, precision and accuracy of two methods were compared, and the accuracy and reliability of two methods were verified by recovery rates and quality control sample. Results The average recovery rate of spectrometry was 95.3%, quality control sample deviation from real value 9.1%, the average recovery rate of ICP-OES was 100.2%, quality control sample deviation from real value 1.6%. Conclusion The recovery of ICP-OES method is higher than that of spectrophotometric method, with low detection limit, high sensitivity, simple operation process, which is more accurate and rapid to determinate the aluminum content.
