食源性铝污染及其毒性研究进展
铝是地壳中储量最丰富的金属元素, 在现代社会中应用也十分广泛。在食品工业中, 铝被用作食品添加剂以改善食品的口感、颜色等感官品质。然而, 饮食中过量的铝暴露会导致人体内抗氧化体系的失衡, 增加人体受到的氧化损伤。机体内过量的铝会引发细胞内钙离子平衡的失调, 进而影响到第二信使系统。此外, 铝暴露会导致体内能量代谢失调、核酸表达抑制, 进而导致体内神经、免疫、骨骼等各系统的功能受损, 严重危害人体健康。因此, 本文从食源性铝的污染途径, 铝的体内代谢过程以及毒性机制进行综述, 以期为以后的铝毒性研究提供参考。
Aluminum is the most abundant metal element in the earth's crust and is widely used in modern society. In the food industry, aluminum is used as a food additive to improve the sensory qualities of foods such as mouthfeel and color. However, the excessive exposure to aluminum in the diet might induce the imbalance of antioxidant system, increasing the oxidative damage. Moreover, excessive aluminum in the body could break the balance of cellular ions, especially calcium, which act as an important factor of second messenger system. Furthermore, aluminum exposure also leads to disorders of energy metabolism and inhibition of nucleic acid expression in body, which is potential to induce damage to the nervous, immune, skeletal, and other systems in the body and consequently do harm to health. Therefore, this paper reviewed the pollution pathway of foodborne aluminum, the metabolic process of aluminum and the mechanism of toxicity, in order to provide references for future studies on aluminum toxicity.
