食品中甜蜜素的应用及检测方法的比较
近年来食品中甜蜜素的添加情况, 成为食品安全检测的重点。我国已经明确规定了甜蜜素的使用范围和最大使用量, 但超范围、超限量的使用情况却屡见不鲜。甜蜜素的分析方法包括样品前处理方法和甜蜜素的检测方法。根据不同的食品种类, 需要选择合适的样品前处理方法, 具体方法包括: 透析法、除油脂蛋白沉淀法、挥发法、超声离心法和固相萃取法。甜蜜素的检测方法包括: 常规理化法、色谱法、质谱法。本文从甜蜜素在国内食品行业的应用现状、样品前处理技术、检测方法及不确定度等方面进行综述, 旨在找到最合适且快速准确的测定甜蜜素的方法, 为食品安全监督检测提供参考。
In recent years, the addition of sodium cyclamate has become the focus of food safety testing. China has clearly stipulated the use range and maximum usage of sodium cyclamate, but the use of excessive range and limit is common. The analysis methods of sodium cyclamate include sample pretreatment method and sodium cyclamate detection method. According to the different kinds of food, it is necessary to choose the suitable sample pretreatment method, including dialysis method, degreasing protein precipitation method, volatilization method, ultrasound centrifugation and solid phase extraction. Detection methods of sodium cyclamate include conventional physical and chemical methods, chromatography, mass spectrometry. This paper reviewed the application status of sodium cyclamate in the domestic food industry, sample pretreatment technology, the detection methods, uncertainty and so on, in order to find the most suitable and rapid and accurate method for determination of sodium cyclamate, and provide a reference for food safety supervision and detection.
