超高压处理对养殖大黄鱼肉肌原纤维蛋白理化特性的影响
本文研究超高压处理对养殖大黄鱼肌原纤维蛋白的理化特性的影响。经超高压处理后测量养殖大黄鱼肌原纤维蛋白的持水性、溶解性、表面疏水性和乳化性,结果表明:超高压处理增大了肌原纤维蛋白的持水性、溶解性、表面疏水性和乳化性,当压力350 MPa,保压时间为10 min处理时持水性(3.17 g/g pro)最高,溴酚蓝结合量(21.033 μg)最高,乳化性活性(Emulsifying activity,EAI)最高(46.42 m2/g),均高于未处理组。经超高压处理后,肌原纤维蛋白的DSC的热焓值和变性温度发生改变。在300 MPa下改变保压时间时,在10 min保压时间内随着保压时间的增长,肌原纤维蛋白的持水性、溶解性、表面疏水性和乳化性逐步增加,而乳化稳定性则降低;DSC使氢键断裂,蛋白质有序结构变化。而随着保压时间进一步增长,肌原纤维蛋白的持水性、溶解性、表面疏水性和乳化性开始降低。实验发现,超高压处理对养殖大黄鱼肌原纤维蛋白的理化特性有明显的影响。
This experiment studied the effect of ultra high pressure treatment on the physicochemical properties of myofibrillar protein in cultured large yellow croaker. Measurement of water retention, solubility, surface hydrophobicity and emulsification of cultured myofibrillar protein of cultured yellow croaker by ultra-high pressure. The results showed that ultrahigh pressure treatment increased the water retention, solubility, surface hydrophobicity and emulsification of myofibrillar protein.When the pressure was 350 MPa and the holding time was 10 min, the water holding capacity (3.17 g/g pro) was the highest, the highest (21.033 μg) and the highest EAI (46.42 m2/g) were higher than those of the untreated group.After ultra-high pressure treatment, myofibrillar protein DSC thermal enthalpy and denaturation temperature changed.When the holding time was changed at 300 MPa, the water retention, solubility, surface hydrophobicity and emulsification of myofibrillar protein increased gradually with the increase of holding time(10 min), and the stability of emulsification was decreased. DSC breaks the hydrogen bonds and changes the orderly structure of the protein.With the further increase in holding time, myofibrillar protein water retention, solubility, surface hydrophobicity and emulsification decreased. It was found that the ultrahigh pressure treatment had a significant effect on the physicochemical properties of myofibrin in cultured yellow croaker.
