高分辨质谱在食品检测分析中的应用进展
高分辨质谱技术在食品检测分析领域的应用日益广泛。本文对高分辨质谱的特点进行了阐述, 并对近十年发表的相关文献进行了总结和分析。以兽药、农药残留, 生物毒素, 持久性有机污染物的应用为例进行综述, 并对高分辨质谱在食品检测分析领域的应用进行了展望。高分辨质谱可用于定向和非定向化合物的筛查, 其参数设定简单, 且不需要标准品, 可同时测定上百种化合物, 极大的提高了检测效率。

High resolution mass spectrometry is widely used in food detection and analysis. This paper described the characteristics of high resolution mass spectrometry, summarized and analyzed the relevant reports and researches in the last ten years. This article also reviewed the application of high resolution mass spectrometry on determination of veterinary and pesticide residues, persistent pollutants, biotoxin, and prospected the application of high resolution mass spectrometry in food detection and analysis. High resolution mass spectrometry can be used for the screening of targeted and non-directional compounds, and its parameters are simple and do not require standard products, which can simultaneously determine hundreds of compounds and greatly improve the detection efficiency.
