食品微生物追踪溯源网络分析探讨
随着食品工业化、集团化进程的飞速发展, 我国乃至全球的食品生产和消费模式都发生了巨大转变, 食品微生物安全也从地域性问题向全国、全球性问题转变。如何通过可靠的溯源手段将不同地区散发病例识别为同一微生物来源污染食品引起的食品安全事件爆发, 并将污染食品准确召回, 对政府监管部门和技术部门提出了挑战。本文主要从食品安全微生物溯源技术现状、发展趋势和我国食品安全微生物溯源技术应用存在的问题进行了概述, 并提出了建立食品安全监管系统微生物收集和溯源平台, 构建实物与基因组溯源数据库等建议, 以期给我国政府监管部门及相关技术人员提供更多的信息和借鉴。
With the rapid development of the process of food industrialization and collectivization, food production and consumption patterns have undergone a major shift in China and around world, and the safety of food microbiology gradually changed from regional problems to national and global problems. How to identify the sporadic cases in different areas into food safety incidents caused by the same microbial source contaminated food through reliable microbial source tracking, and accurately recalls the contaminated food, it poses challenges for the government regulators and the technical department. This review summarized the status, development trend of microbial source tracking in food safety and its problems in application, at the same time, proposed a recommendation to establish a microorganism collection and traceability platform, build the database for strain and genome level, etc. The purpose of these proposals is to provide references for Chinese government and related practitioner staff.
