生物芯片在食品安全检测中的应用研究进展
近年来, 食品安全问题层出不穷, 严重危害了人们的身体健康, 这类问题的根除依赖于迅速发展的科学技术。而生物芯片凭借高通量、高灵敏度、自动化、样品用量少和检测结果快速直观等十分明显的优势, 在食品安全检测中应用广泛。本文简要综述了生物芯片的原理和基本制作流程, 重点探讨该技术在检测病原微生物、有害物污染或残留、转基因食品和过敏原食品领域中的应用现状, 指出目前生物芯片依然存在的不足, 并对未来发展的主要趋势做出展望。
In recent years, food safety problems have emerged in an endless stream and have seriously endangered people's health. The eradication of such problems depends on the rapid development of science and technology. Biochip has been widely used in food safety testing due to its obvious advantages such as high throughput, high sensitivity, automation, low sample consumption and rapid and intuitive detection results. This paper summarized the principles and the basic process of biological chip, discussed the technology in the detection of pathogenic microorganisms, harmful pollution residues, genetically modified foods and application status in the field of food allergen, pointed out the existing shortcomings of biochip, and predicted the main development trend in the future.
