富硒食品的研究进展
富硒食品是膳食补硒的主要来源。硒元素作为谷胱甘肽过氧化物酶必需组成部分而在人体中发挥着保护细胞膜、抗癌、延缓衰老、预防心脑血管疾病等作用, 与富硒食品特殊的保健功效紧密相关。随着对全球范围内普遍缺硒问题的认识愈来愈清晰, 如何科学合理、健康安全地补硒受到了广泛的关注。因此, 近年来国内外对天然或人工富硒资源中硒元素的相关研究逐渐增多。本文从天然资源中硒的形态分析、富硒组分的生物活性评价和开发、硒元素的人工转化等方面论述了富硒食品的研究开发进展, 为富有机硒食品作为补硒营养源的开发提供参考。
Se-enriched food is the main source of dietary supplement selenium. As the essential component of glutathione peroxidase, the roles of selenium in cell membrane protection, anticancer, anti-aging, cardiovascular and cerebrovascular disease prevention, are closely related to the special health benefits. With the clear understanding of the universal selenium deficiency problem worldwide, scientific and reasonable, healthy and safe ways of selenium supplementation have been concerned. Therefore, the domestic and foreign researches on selenium element of natural or artificial Se-enriched resources gradually increased in recent years. This review summarized the research status and progress of Se-enriched food, including selenium speciation of natural resources, biological activities evaluation and development of Se-enriched components, artificial conversion of selenium, in order to provide references for development of organic Se-enriched food as a source of selenium supplementation.
