对舰船远航食品安全保障体系建设的思考
鉴于舰船远航面临远离陆地补给和复杂海况环境等对食品安全保障的特殊要求及困难, 为解决海上食品安全保障复杂性、艰巨性和高风险性等问题, 本文从远航食品安全制度建设、组织保障、上舰食品全过程溯源系统等方面构建了舰船远航食品安全保障体系的主要内容, 提出了控制食品源头、规范加工操作、优化生产环境等措施, 并对其进行了建设性的思考, 从而保障舰船远航食品新鲜方便、营养安全, 并延长贮藏期, 以满足舰船远航食品的要求。
Considering special requirements and difficulties of ensuring food safety such as facing away from land supply and complex sea environment for ship sailing, this article mainly constructed food security guarantee system for long voyage ships from several aspects such as security system construction, organizational guarantee, and the traceability system of the whole process of ship food, so as to solve the problems of complexity, difficulty and high risk of food safety. The paper put forward some measures including the control of food source, standardization of operation, optimization of the production environment and other means, and made a constructive thinking about it, so as to protect the ship voyage food to be fresh, convenient, nutrient and safe, and prolong the storage period to meet the demand of food for long voyage ships.
