两种保鲜液对南国梨保鲜效果的比较
摘 要:目的 探究两种保鲜液对南国梨保鲜效果。方法 测定南国梨样品的外观变化、失重率、酸度及总糖含量的变化。结果 两种保鲜液均具有良好的保鲜效果。保鲜液2的保鲜效果更明显, 用此保鲜液制成的保鲜纸包装样品, 35 d后果品外观良好, 失重率比对照组降低了1.76%, 酸度减少了0.07%。说明这种保鲜液制成的保鲜纸能有效地减少水分散失、保持果品风味。结论 两种保鲜液对南国梨均具有良好的保鲜效果, 将对发酵型天然保鲜剂的系统研究奠定基础。
Objective To explore preservation effect of two kinds of fresh-keeping-liquid for Nanguo-pear. Methods The appearance of Nanguo-pear sample change, weightlessness rate, change of acidity and total sugar of three indicators were detected. Results Two kinds of fresh-keeping-liquid had good preservation effect. The preservation effect of fresh-keeping-liquid 2 was more obvious. The weightlessness rate of samples with fresh-keeping-liquid tin foil packing was reduced 1.76%, acidity was decreased 0.07% after 35 d compared with the control group. The results indicated that the fresh-keeping-liquid made of tin foil could effectively reduce water retention, keep the fruit flavor. Conclusion Two kinds of fresh-keeping-liquid have good preservation effect on the Nanguo-pears, it will lay a research foundation for fermentation type natural antistaling agent.
