HACCP体系在滩涂鸭鲜蛋生产中的应用研究
目的 研究滩涂鸭养殖生产出安全无污染的鸭蛋。方法 基于HACCP体系的基本原理, 对湛江某滩涂鸭场进行实地调查, 以滩涂鸭蛋为研究对象, 对滩涂鸭蛋的整个生产和销售过程制定危害评价程序, 确定关键控制点, 并采用相应的控制措施。结果 将HACCP体系应用到滩涂鸭鲜蛋生产和流通的各个环节中, 蛋鸭品种、饮水、饲料、兽药、环境管理、贮存这6个关键控制点最为重要。结论 HACCP体系能够有效预防和控制滩涂鸭鲜蛋生产过程中的食品安全问题, 保障滩涂鸭鲜蛋的安全性。
Objective To investigate beach cultivation ducks to produce safe and pollution-free eggs. Methods Based on the basic principles of HACCP system, after field investigation of a duck farm in Zhanjiang, using beach duck eggs as research objects, hazard evaluation procedures were enacted during the production and wholesale of duck eggs, and critical control points were determined with corresponding control measures. Results The HACCP system was applied to each link of beach duck egg production and circulation. Duck breed, water, feed, veterinary drugs, environmental management, and storage were the six of the most important critical control points. Conclusion HACCP system can effectively prevent and control the food safety problems of beach cultivation duck eggs in the production process and ensure the safety of the beach cultivation duck eggs.
