基于电子鼻技术的蓝莓果实品质变化研究
目的 建立一种基于电子鼻技术的蓝莓果实新鲜度的判别方法。方法 将蓝莓果实分为剂量组和分级组, 剂量组包括0.00、0.75、1.50和3.00 kGy 4个辐照剂量组, 分级组包括0.00和1.50 kGy辐照处理的大号、中号和小号果实组。用60Co-γ辐照源对每组蓝莓果实进行辐照处理, 并进行感官评价与腐烂率、花青素和总酸含量的测定, 再利用电子鼻技术对各组蓝莓果实的挥发性成分进行测定, 并利用主成分分析、线性判别分析和载荷分析方法对测得的气味指纹数据进行分析。结果 经1.50 kGy辐照处理的蓝莓果实感官评分最高, 腐烂率较低, 且果实中的花青素和总酸含量变化较小。利用电子鼻技术能很好地区分不同辐照处理的蓝莓果实在贮藏过程中的挥发性气味变化, 且确定出的最佳辐照剂量与感官评价和理化指标测定的分析结果一致。结论 电子鼻技术可以作为一种快速检测方法应用于蓝莓果实新鲜度的检测。
Objective To establish a discrimination method of freshness of blueberry fruits based on the electronic nose technology. Methods The blueberry fruits were divided into dose group and hierarchical group. The former groups contained 4 irradiation dose groups with 0.00, 0.75, 1.50 and 3.00 kGy, respectively, and the later groups consisted of large, medium and small-sized fruits which treated by 0.00 and 1.50 kGy. Each group of blueberry fruits was processed by 60Co-γ irradiation source. Then the sensory evaluation was conducted and the rotting rate, content of anthocyanin and total acid were determined. After that, the volatile components of blueberry fruits were tested by electronic nose, and the odor fingerprint data were analyzed by principal component analysis (PCA), linear discriminant analysis (LDA) and load analysis (LA). Results The blueberry fruits treated with 1.50 kGy got the highest sensory score and a lower rotting rate. Meanwhile, the content changes of anthocyanin and total acid in them were smaller. The electronic nose technology could distinguish the changes of volatile components well in blueberry fruits during storage treated with different doses of 60Co-γ irradiation, and the optimal dose obtained was consistent with the results by sensory evaluation and physical and chemical indicators. Conclusion The electronic nose technology can be used for the rapid analysis of freshness of blueberry fruits.
