我国水产品质量安全管理现状与发展建议
水产品含有丰富的蛋白质、脂肪、矿物质和维生素, 营养价值较高, 是人类的主要食物来源之一。但是,随着近年来一些水产食品安全事件的曝光, 人们对水产品及其加工制品的质量安全也越来越关注。本文介绍了目前我国在水产品质量安全管理上的现状, 主要通过对水产品在养殖、运输和生产加工3方面过程中可能存在的污染物残留、冷链保鲜、加工技术与质量控制体系等不足之处的现象与原因加以分析, 从而提出加强水产品在养殖、运输和生产加工方面的质量安全管理建议, 以促进我国水产行业的繁荣稳定发展。
More and more consumers were keen on aquatic products because of its high nutrition value with much protein, fat, mineral substance and vitamin. Meanwhile, people began to pay attention to the quality safety of aquatic product, since the food safety incidents happened recently. The status of quality safety man-agement of aquatic product in China was studied, especially the situation and reasons of the problem such as pollutant residue, cold chain protection, processing technique and quality control system were analyzed, which were linked to the aquaculture, transportation and manufacture. Then the proposals were propounded to improve the quality safety management and to build stable and prosperous aquatic product industry in our country.
